Tapioca & coconut pudding; don’t bother

I have a tapioca pudding recipe somewhere (goes something like 1 egg, 1 cup milk, half cup tapioca flour, some sugar, mix, bring to boil, let cool). This is the same, but you add about 1/4 cup of shredded coconut.

 

I’ve done it yesterday and well, it wasn’t all that special. And I love coconut! Maybe because my shredded coconut is not shredded into tiny tiny shreds, so it doesn’t “mix” very well into the pudding. So it’s good for variety, but nothing really special.
